I feel like there are some flavors that are universal in my family. As in, just about everyone likes them. Other than chocolate (because, duh), peanut butter is the main one that comes to mind: with the exception of Carly and Stefan, I think everyone in my family likes peanut butter (just don't put it into frosting 🤦♀️).
There's also strawberry. Other than my dad, I'm not sure if there's anyone in my family who doesn't like strawberries (if there is, they're not as vocal about it 😏). So since he wasn't going to be here for Easter, I decided to make something with strawberries in it. After looking at both hard copies and digital copies, I decided on a cake and frosting recipe from The Spruce Eats.

Mixed Berry Scones
When it comes to breakfast, I'm a waffle person. I even left my waffle iron out on my counter after making waffles last summer because of how frequently I've made a recipe from high school cooking class. But I haven't just stuck with waffles: there's a hack (if you want to call it that) for cooking a tube of cinnamon rolls (like Pillsbury) in a waffle iron. Since it was something I've wanted to try for a while I did that last fall. Once those ran out, though, I started looking for a non-waffle recipe. With Lent on the horizon I decided to look for something with berries. I focused on scones since my last attempt had been a failure and I wanted to try again. I eventually found Mixed Berry Scones on the Averie Cooks blog.

Strawberry Coconut Cake Mix Cookies
For Mother's Day this year I knew I had to do something simple. Auntie Vicki was having a brunch and my mom wanted me to make the orange pound cake I'd made her a couple birthdays ago (the night Anthony and Kati announced their engagement). Because I would be limited on time I decided to look at what kind of cookies or bars I could make with a box mix (I have no idea who it was that first came up with the idea to doctor box mixes but I will never not thank that person. The recipes are great when I'm short on time). For the flavor I decided to make something with coconut (I can't seem to not make something for my mom with coconut. Not that she's complaining) and that was strawberry flavored. The latter I did for two reasons: 1) I love strawberries and I know she's not picky about what flavors her treats are and 2) my dad (for whatever reason) hates strawberries so even if what I picked didn't have coconut, he'd stay away from them. I eventually settled on Strawberry Coconut Cake Mix cookies from The Frugal Girls.
(P.S. I know it's been two weeks since Mother's Day. My first excuse was that iCloud wasn't working so I couldn't get the pics on my iPad to make the collages. My second excuse is that I've been hesitant to do certain things lately. Like cut cable and switch to paid streaming services like Netflix.)
